Tofu & Greens Stirfry

Some meals are all about the process and others are about getting something delicious on the table with as little fuss as possible. This greens stir-fry definitely falls into the second camp. It takes less than 10 minutes, is full of goodness, packs a big flavour punch and makes a perfect light lunch or supper. There’s plenty of texture going on here – crunchy Savoy cabbage, melting sauted baby spinach and the 'meaty' tofu, all brought together with Spicy Peanut & Seaweed CRUMS, fresh lime juice and a little kick of red chilli. It’s fresh, zingy and very moreish.

Nutritionally, it’s bang on too. Tofu's a great source of plant-based protein, while Savoy cabbage and spinach bring plenty of fibre, vitamin C, vitamin K, folate and other micronutrients. The lime and chilli add plenty of flavour without the need for sauce making or additional fat - making this a wonderfully simple way to get more greens into your day.

This is my favourite kind of everyday food – simple wholefood ingredients, lots of flavour and something delicious on the table in minutes. Add an extra scattering of CRUMS for extra texture and flavour at the end.
