Caesar Salad

This is our favourite take on the classic Caesar salad - no chicken or dairy in sight. Three Caesar boxes are ticked - fresh crunchy leaves, a rich creamy dressing and something delicous & umami scattered over the top - check!

Cashew Parmysan CRUMS does Parmesan's job here and very well too we think. The creamy, rich and dairy free tahini sauce is so deliciously moreish. This is such a great example of what we developed CRUMS nut and seed sprinkles for - adding the Chef's kiss to a simple salad and creating a flavour packed plant-based verson of a classic. So no one ever has to miss out!

Serves 4 · Pairs with Cashew Parmysan CRUMS


Ingredients

For the Caesar sauce, blend:

  • 1 cup (120g) cashews

  • 1 tbsp (10g) nutritional yeast

  • 1 dsp (5ml) apple cider vinegar or lemon juice

  • 1 tsp maple syrup

  • 1 dsp (25g) tahini

  • Approx 180ml oat milk

  • Generous pinch sea salt


  • Around 80g of bread, cut into cubes or torn into small chunks (ciabatta recommended)

  • 1 block firm tofu, pressed for at least 30 minutes (Tofuture brand recommended)

  • 2 Romaine or 4 Little Gem lettuce, washed and cut into chunks

  • 1/2 cucumber, cut into small bite-sized chunks

  • Cashew Parmysan CRUMS (40g plus more for sprinkling)

  • Extra virgin olive oil

  • Sea salt

  • Freshly ground black pepper


Method

  1. Put your bread cubes into a bowl with a drizzle of olive oil and season with salt and pepper — stir gently to coat the bread. Either bake in the oven at this point, or fry in a pan.

  2. Cut pressed tofu into cubes. Add to a pan with a glug of olive oil and season generously with salt and pepper. Fry until golden brown on all sides.

  3. While the croutons and tofu are cooking, make the Caesar-style dressing: blend all sauce ingredients in a hand blender (a high-speed blender gives an even silkier dressing). Add a little more milk or water if needed to reach a thick pouring consistency.

  4. Add lettuce and cucumber to a big bowl and toss with the Cashew Parmysan CRUMS and dressing, saving some for drizzling. Arrange in a dish and top with tofu cubes and croutons. Finish with freshly ground black pepper, a drizzle of Caesar dressing and a generous sprinkle of Cashew Parmysan CRUMS.
